چکیده

The quantitative antioxidant activity of foods is expressed as the equivalent weight authentic standard compounds with function. Even in same food sample, defined differently depending on compounds, making it difficult to compare them. Antioxidant was measured by DPPH radical and ABTS scavenging assay using Trolox, ascorbic acid, catechin, gallic acid compounds. relationship between used convert a specific another standard. To verify converted activity, apples analyzed several standards compared other As result comparing various apples, confirmed that there no difference. results this study show compound can be accurately into compound.
